1️⃣ Prep the Pan & Preheat Oven

  1. Preheat oven to 150°C (300°F).
  2. Line an 8-inch round cake pan with parchment paper and wrap the outside with aluminum foil to prevent water leakage from the water bath.

2️⃣ Melt & Mix

  1. In a heatproof bowl, melt cream cheese, butter, and milk over a double boiler until smooth.
  2. Remove from heat and let it cool slightly.

3️⃣ Combine Dry Ingredients

  1. Sift together cake flour, cornstarch, cocoa powder, and salt.
  2. Gradually add the dry ingredients into the cream cheese mixture, whisking until smooth.

4️⃣ Prepare the Meringue

  1. In a clean bowl, beat egg whites with cream of tartar until foamy.
  2. Slowly add sugar and beat until soft peaks form.

5️⃣ Fold & Blend

  1. Add the egg yolks and vanilla extract into the cream cheese batter.
  2. Gently fold in the meringue in three parts, being careful not to deflate the batter.
