3. Combine Dry Ingredients:
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture, stirring until the dough comes together.
If using, fold in the chocolate chips for an extra chocolatey cookie.
4. Shape the Cookies:
Scoop out tablespoon-sized portions of dough and roll them into balls.
Flatten each ball slightly, then place a mini Peppermint Patty in the center of each one.
Enclose the Peppermint Patty by pinching the dough around it, ensuring the candy is completely covered by the dough.
5. Bake the Cookies:
Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Bake the cookies in the preheated oven for about 8-10 minutes, or until the edges are set but the centers are still soft.
Let the cookies cool on the baking sheets for a couple of minutes before transferring them to wire racks to cool completely.
