Wrap the potatoes in aluminum foil, then add salt and a drizzle of oil.
Bake at 200°C for 1 hour.
Sauté the diced onion, bell pepper and bacon in a pan with olive oil. Season with salt and red pepper flakes.
Cut the potatoes in half and score the inside.
Mash the potatoes and mix them with the filling from the pan.
Also add the chopped parsley and grated cheese to the potato mixture.
Fill the potatoes with the prepared mixture and bake for another 15 minutes.
Simply fantastic! Could eat this for lunch and then dinner again!
