Homemade Cherry Pie Bars

This cherry pie recipe eliminates the need to go through the trouble of preparing a pie crust from scratch! The filling for this recipe may be made using either frozen or fresh sour cherries, and it can be prepared quickly on the stove. The crust and crumble topping are created using a same batter prepared in one dish. An almond frosting drizzle serves as an ideal flavor-enhancing final addition. Ensure that the baked goods have fully cooled prior to applying frosting and slicing.
Ingredients Crust and Topping
1.5 cups (188g) of all-purpose flour, measured by spooning and leveling.
1 cup (85g) plus 2 tablespoons (11g) of old-fashioned whole rolled oats, separated
0.5 cups (100 grams) Use either light or dark brown sugar that is tightly compressed.
1 tsp of baking powder
1 tsp lemon zest
0.125 teaspoons of salt
10 tablespoons (142g) of melted unsalted butter
1 tsp of undiluted vanilla essence
Cherry Completion
1.5 tablespoons, equivalent to 11 grams Cornstarch
3.5 cups (525g) of frozen sour cherries, without thawing
0.5 cups (100g) of granulated sugar
1 tsp of freshly squeezed lemon juice
0.25 teaspoons of almond extract
Almond Icing (Optional)
1 cup (120g) powdered sugar
2 tablespoons (30ml) of milk
0.25 teaspoons of almond extract
