INSTRUCTIONS:
Prepare your grill to medium-high heat or your oven to 400°F (200°C).
In a large bowl, combine the thinly sliced potatoes, sliced onion, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper. Toss everything together until the potatoes and onions are evenly coated with the oil and seasoning.
Tear off four large pieces of aluminum foil, each about 12 inches in length. Place a portion of the potato mixture in the center of each foil piece, dividing it equally among them.
Fold the sides of the foil over the potatoes, creating a packet. Be sure to seal the edges tightly to prevent any juices from leaking out during cooking.
Place the foil packets directly on the grill grates or on a baking sheet if using the oven.
Cook the foil packets for about 20-25 minutes on the grill or 30-35 minutes in the oven, or until the potatoes are tender and cooked through. You can carefully open one packet to check for doneness.
Once the potatoes are cooked, carefully open the foil packets (watch out for steam) and transfer the contents to a serving dish.
If desired, sprinkle some grated cheese, chopped bacon, or fresh herbs over the potatoes for an extra flavor boost.
Serve the Easy Potatoes Foil Packets hot alongside your favorite grilled meats or as a standalone side dish.
