- Prepare the Loaf:
- Preheat the oven to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan.
- In a medium bowl, sift together 1 1/2 cups of flour, baking powder, and salt. Set aside.
- In a large bowl, whisk together yogurt, sugar, eggs, orange zest, vanilla, and vegetable oil until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Toss cranberries with the remaining tablespoon of flour, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
- Prepare the Orange Syrup:
- In a small saucepan over medium heat, combine orange juice and sugar.
- Stir until the sugar is dissolved, then continue to cook for an additional 3 minutes.
- Remove from heat and set aside.
Brought this out as a party appetizer, and everyone ate at least 4!
