- Preheat Oven: Set your oven to 375°F (190°C).
- Make Cajun Seasoning: In a bowl, combine garlic powder, paprika, dried oregano, onion powder, dried thyme, red pepper flakes, cayenne pepper, salt, and black pepper. Mix thoroughly to create your Cajun seasoning blend.
- Prepare Vegetables: In a baking dish, toss the quartered red potatoes, quartered corn, 2 minced garlic cloves, 1 tsp olive oil, and 1/2 tsp of your Cajun seasoning mix. Ensure the vegetables are evenly coated with the spice mixture. Dot with cubed butter on top.
- Mix the Rest: In another bowl, mix the chopped Andouille sausages, shrimp, remaining minced garlic, and the rest of the olive oil. Add a couple of teaspoons of the Cajun seasoning mix and stir well to combine.
- Assemble: Spread the sausage and shrimp mixture evenly over the top of the seasoned vegetables in the baking dish.
- Bake: Place the baking dish in the preheated oven and roast for about 35-40 minutes, or until the potatoes are tender and the shrimp is cooked through.
