Instructions
1. Prepare the Crust:
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar.
- Press mixture firmly into the bottom of the springform pan.
- Bake for 10 minutes. Let cool while preparing the filling.
2. Make the Cheesecake Layer:
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing after each addition.
- Mix in vanilla extract, lime juice, and lime zest.
- Pour the mixture over the crust and smooth the top.
- Bake for 50 minutes or until set. Allow to cool completely.
3. Prepare the Lime Mousse:
- Whip heavy cream with powdered sugar until stiff peaks form.
- Fold in lime curd gently until combined.
- Spread mousse over the cooled cheesecake layer.
