Alternate adding dry ingredients and buttermilk to the wet mixture, mixing until combined.
Fold in crushed Mint Oreos.
Bake the Cake:
Divide the batter between the pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
Prepare the Cheesecake Filling:
Beat cream cheese and sugar until smooth. Add eggs, mint extract, and vanilla extract, mixing until creamy. Fold in crushed Mint Oreos.
Make the Frosting:
Beat butter and cream cheese until smooth. Gradually add powdered sugar, vanilla extract, and mint extract.
Fold in crushed Mint Oreos and chopped M&Ms for texture and flavor.
