Ingredients
For the noodles:
8 oz rice noodles (or spaghetti/angel hair for a heartier version)
1 tbsp olive oil or sesame oil
2 cloves garlic, minced
½ tsp red pepper flakes (adjust to taste)
For the sauce:
¼ cup fresh lime juice (~2 limes)M
1 tsp lime zest
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp honey or agave syrup
1 tbsp rice vinegar
1 tbsp sesame oil
½ tsp salt (adjust to taste)
For garnish:
½ cup fresh cilantro, chopped
2 green onions, sliced
¼ cup toasted peanuts or cashews (optional)
1 tsp sesame seeds (optional)
Extra lime wedges for serving
