If you’re looking to mix things up, try using brown rice or quinoa for a healthier twist. You can also substitute smoked chicken or shrimp for the Andouille sausage, depending on your preference. For a vegetarian version, omit the sausage and add more vegetables like mushrooms or zucchini. Adjust the heat level by adding more or less cayenne pepper, or include some chopped jalapeños for an extra kick.
