Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

Spread the potatoes in a single layer on the prepared baking sheet.

Bake in the preheated oven for 20 minutes.

Remove the baking sheet from the oven and sprinkle the Parmesan cheese over the potatoes.

Return to the oven and bake for an additional 10-15 minutes, or until the potatoes are golden and crispy.

Sprinkle with fresh parsley before serving, if desired.

Variations & Tips

For a spicy kick, add a pinch of cayenne pepper to the seasoning mix. You can also experiment with different cheeses like cheddar or mozzarella for a different flavor profile. If you’re short on time, use pre-cooked potatoes or even frozen diced potatoes to cut down on prep. For a vegan version, substitute nutritional yeast for the Parmesan cheese.
