Mix the mashed potatoes with the ground beef mixture cooked in the pan.
Stuff each potato skin with the beef and potato mixture. Top each stuffed potato with shredded mozzarella cheese.
Return the stuffed potatoes to the baking sheet and return to the oven. Bake for another 10-15 minutes or until the cheese is melted and bubbly.
Once the cheese is melted and the stuffed potatoes are heated through, remove from the oven.
Serve the stuffed potatoes warm, garnished with chopped fresh herbs if desired.
