3 eggs
Salt, pepper, paprika
Fresh parsley
Bunch of green onions
100g mozzarella
Butter
Slices of bread

Finely chop a handful of fresh parsley and slice a bunch of green onions, separating the green and white parts.
Melt a knob of butter in a skillet over medium heat. Once melted, pour in the beaten eggs and cook, stirring occasionally, until lightly scrambled. Add the chopped parsley and white parts of the scallions, letting them infuse into the eggs.
While the eggs are cooking, thinly slice the mozzarella and set aside.
Toast slices of bread until golden and crispy. Spread a generous amount of butter on each slice for added richness.
