Step by Step Preparation
Step 1: Prepare the base of the log
Preheat your oven to 180°C (thermostat 6).
Separate the egg whites from the yolks into two separate bowls.
In the bowl of yolks, add the cream cheese, mustard and liquid cream. Mix with a whisk to obtain a smooth and homogeneous consistency.
Beat the egg whites until stiff with a pinch of salt, then gently incorporate them into the previous mixture with a spatula, lifting the mass to preserve the air.
Step 2: Incorporate the seafood ingredients
Add the crab meat and pieces of smoked salmon to the mixture, stirring gently to preserve the aeration.
Line a log mold or a rectangular mold with baking paper, then pour the preparation into it, smoothing the top well with a spatula.
Step 3: Cooking
Bake in the oven for 30 minutes, or until the log is golden and firm to the touch.
Let cool completely in the mold before unmolding to ensure a nice hold.
Step 4: Decoration and serving
Once cooled, carefully unmold the log onto a serving dish.
Decorate with the peeled prawns, arrange lemon wedges, and sprinkle with chopped chives or dill.
