Instructions
Step 1: Cook the Noodles
- Boil water in a medium pot and cook the noodles according to the package instructions. Drain and set aside.
- Toss the drained noodles with 1 teaspoon sesame oil to prevent sticking.
Step 2: Prepare the Sauce
- In a small bowl, mix soy sauce, oyster sauce, sugar, and chili flakes. Set aside.
Step 3: Stir-Fry the Noodles
- Heat vegetable oil in a pan over medium heat.
- Add garlic and ginger, stirring until fragrant (about 30 seconds).
- Add the noodles and pour in the prepared sauce, tossing well to coat.
- Stir in the green onions and cook for another 2 minutes.
Step 4: Cook the Eggs
- In another pan, heat butter over medium-low heat.
- Crack the eggs into a bowl and whisk with a tablespoon of water, salt, and pepper.
- Pour the eggs into the pan, stirring gently until scrambled and fluffy.
Step 5: Combine and Serve
- Plate the noodles and top them with the scrambled eggs.
- Garnish with sesame seeds, extra green onions, cilantro, and sliced red chilies if desired.
- Serve immediately and enjoy!
