Add Cheese and Broil: Remove the meatloaf from the oven and top with the reserved 3/4 cup of mozzarella cheese. Sprinkle a little dry basil over the top. Return to the oven for 10 more minutes, or until the cheese is melted and bubbly and the meatloaf is cooked through (no pink remaining). Baking time may vary depending on the thickness of your loaf.
Serve: Let the meatloaf rest for a few minutes before slicing and serving.
