1️⃣ Preparation of the pancakes:
In a bowl, mix the flour, salt, milk, eggs and melted butter until smooth.
Heat a pan with a little butter and fry the thin pancakes on both sides until golden brown. Set aside.
2️⃣ Preparation of the filling:
Melt the butter in a pan, add the sliced leek and garlic. Fry on low heat for about 5 minutes, until the leek is soft.
Add the cream and cook for 2-3 minutes until the sauce thickens.
Add the goat cheese and stir until the cheese has melted. Season with chili pepper, salt and pepper.
3️⃣ Wrapping and baking:
Place the leek-cheese filling in the center of each pancake, fold the edges inwards and roll up.
Place the pancakes in a baking dish, sprinkle with grated Gruyère cheese and bake in a preheated oven at 180°C for 15 minutes, until the cheese is melted and golden brown.
🍽️ Application:
Serve warm, garnish with fresh thyme. Delicious with a light salad or a glass of white wine. 🥂
