Cut the ends off of the rhubarb stalk with a knife. Remove its peel.
Chop the rhubarb into fine small pieces.
Mix the rhubarb pieces with orange juice, maple syrup, orange zest, and lemon juice in a large bowl.
Combine well and set aside for half an hour.
Meanwhile, shift the non-stick skillet to a medium flame.
Add hazelnuts and almonds to this skillet.
Roast it for 7-9 minutes until it is light brown. Set aside it.
Next, cut fresh strawberries and peaches into small slices.
Combine roasted nuts, chopped mint leaves, basil leaves, sliced strawberries, and peaches with marinated rhubarb.
Toss it well until rhubarb coats well with the mixture.
Yummy Vegan Strawberry Rhubarb Salad is ready to serve.

As a topping, you can use Vegan Ricotta chees, and Balsamic vinegar.
Season this salad with crushed black pepper and sea salt.

Marinate rhubarb for approximately 30-40 minutes so that juices absorb well.
Choose good-quality strawberries and peaches to prepare this salad.
Refrigerated fruits will also work with this salad.
Wash fruits and rhubarb before making the salad.
Notes
You can also roast the almonds and hazelnuts for 7-9 minutes in a microwave oven to 450 degrees.
