Carefully roll up each noodle and place seam-side down in the baking dish.
Pour the remaining marinara sauce over the roll-ups.
Sprinkle the remaining mozzarella and Parmesan cheese over the top.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
Variations & Tips
For a vegetarian version, you can easily swap out the sausage for sautéed mushrooms or a spinach and bell pepper mix. For picky eaters, consider using a mild sausage or even ground chicken. If your family enjoys a bit of spice, a pinch of red pepper flakes in the cheese mixture will add a nice kick.
