Preparing the Potato Base

  1. Cook the Potato:
    • Peel and dice the potato. Place it in a small saucepan and cover with water.
    • Bring to a boil and cook until the potato pieces are tender, about 10-15 minutes.
    • Drain the potato and mash it until completely smooth. You should have about 1/2 cup of mashed potato.
  2. Add Vanilla and Sugar:
    • In a large mixing bowl, combine the mashed potato with the vanilla extract.
    • Gradually add the sifted powdered sugar, 1 cup at a time, mixing well after each addition. Continue adding powdered sugar until the mixture forms a stiff, dough-like consistency. This may take 6-8 cups of powdered sugar, depending on the moisture content of the potato.

Rolling and Filling

  1. Prepare the Rolling Surface:
    • Dust a clean work surface with powdered sugar to prevent sticking. Also, dust a rolling pin with powdered sugar.
  2. Roll Out the Dough:
    • Transfer the potato candy dough onto the prepared surface.
    • Roll out the dough into a large rectangle, about 1/4 inch thick. If the dough is too sticky, add a bit more powdered sugar.
  3. Add the Peanut Butter Filling:
    • Spread a thin, even layer of creamy peanut butter over the entire surface of the rolled-out dough, leaving a small border around the edges.
  4. Roll the Candy:
    • Starting from one of the long sides, carefully roll the dough into a log, similar to a jelly roll. Take your time to ensure the roll is tight and even.
  5. Chill the Candy:
    • Wrap the rolled candy log in plastic wrap and refrigerate for at least 1 hour to firm up.
