1 – Prepare the Crust:
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
- Crush the saltine crackers into fine crumbs using a food processor or by placing them in a plastic bag and gently rolling over them with a rolling pin.
- In a mixing bowl, combine the cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.
2 – Press into Pie Dish:
- Press the crumb mixture firmly and evenly into the bottom and up the sides of the prepared pie dish, creating a crust. Use the back of a spoon or the bottom of a measuring cup to press down firmly.
Make the Filling:
- In a separate mixing bowl, beat the eggs with the remaining 3/4 cup of granulated sugar until pale and fluffy.
- Stir in the vanilla extract until well combined.
- Pour the egg mixture over the prepared crust, spreading it out evenly.
4 – Bake to Perfection:

- Place the pie dish in the preheated oven and bake for 20-25 minutes, or until the filling is set and the top is golden brown.
- Remove the pie from the oven and let it cool completely on a wire rack before serving.
