INSTRUCTIONS:
- Prepare your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon. Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
- Roast the spaghetti squash in the preheated oven for 40-50 minutes, or until the flesh is tender and can be easily pierced with a fork. Remove from the oven and let cool slightly.
- Once the spaghetti squash has cooled, use a fork to scrape the flesh into a large mixing bowl. Discard the skins.
- Add the crumbled bacon, grated Parmesan cheese, all-purpose flour, beaten eggs, chopped fresh parsley, garlic powder, salt, and pepper to the bowl with the spaghetti squash. Mix well until all ingredients are evenly combined.
- Heat a thin layer of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the spaghetti squash mixture and form it into a patty with your hands. Place the patty in the hot skillet and gently flatten it with a spatula.
- Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Repeat the process with the remaining spaghetti squash mixture, adding more olive oil to the skillet as needed.
- Serve the Bacon Spaghetti Squash Fritters hot, garnished with additional Parmesan cheese and fresh parsley if desired.
- Enjoy the crispy, savory goodness of these fritters as a delicious appetizer, snack, or light meal!
