Instructions:
Preheat the oven to 200 degrees F (93 degrees C).
In a large bowl, combine mashed potatoes, beaten egg, flour, breadcrumbs, salt, and pepper.
Mix the ingredients thoroughly until well combined.
Shape the mixture into small patties, approximately 2 inches in diameter.
Heat vegetable oil in a large skillet over medium heat.
Fry the potato cakes in batches for 2-3 minutes per side, or until they achieve a golden brown color and are cooked through.
Place the fried potato cakes on paper towels to drain excess oil.
Serve immediately or transfer to a baking sheet and bake in the oven for 10 minutes to achieve a crisp texture.
