Season the pork chops with salt and pepper. Sear each side in olive oil until browned, then remove.
Combine cream of onion soup, French onion soup mix, and milk.
Arrange potato slices at the bottom of the dish, topped with the seared chops.
Pour the soup mixture over the chops.
Simply fantastic! Could eat this for lunch and then dinner again!
