Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the diced red potatoes, chopped onion, mayo, garlic powder, dill, salt, and pepper. Toss everything together until the potatoes and onions are evenly coated with the seasonings and mayo.
Spread the potato mixture in a single layer on the prepared baking sheet.
Place the baking sheet in the preheated oven and bake for about 25-30 minutes or until the potatoes are tender and golden brown. You can check the doneness by inserting a fork into a potato piece. If it goes in easily, they are done.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the potatoes. Return the baking sheet to the oven and bake for an additional 3-5 minutes or until the cheese is melted and slightly golden.
Once the potatoes are done and the cheese has melted, remove the baking sheet from the oven. Let the potatoes cool for a few minutes before serving.
