Can I use Stew Meat in this recipe?
Yes, you definitely can use stew meat. In my personal opinion a roast is a bit easier and my family enjoys the texture a bit better because it results in a bit of a shredded beef texture, verses chunks of beef that can sometimes be tough.
However, this is completely your choice. If you prefer stew meat just use it in place of the roast and sear before cooking.
Can I have carrots on a keto diet?
Who knew carrots were so controversial?! Carrots contain carbs, this is true. However, a medium carrot contains less than 5 net carbs. I think this is a vegetable that can be used in moderation on a keto diet. Simply be aware of how much you are eating and you are fine. This holds true to everything on a keto diet, right?
So, I did use one carrot in this recipe. However, if you don’t think you can handle the additional carbs simply omit the carrot.

Can I make this without an Instant Pot?
Of course, you can make this beef stew on the stove top or in the slow cooker. Simply follow the instructions below:
Stove Top Beef Stew Instructions:
Add your oil to a large pot or dutch oven on medium high heat. Sear beef until all sides are browned. Remove from pot, then add onions and garlic to sauté.
