– 1 medium head of cabbage – chopped.
– 2 large peeled carrots – diced.
– A diced onion.
– 2 celery stalks – diced.
– 2 cloves garlic – minced.
– 6 Cups.Of chicken or vegetable broth.
– 1 can.Of diced tomatoes (14-oz).
– 1 bay leaf.
– Salt and pepper to taste.
– Chopped fresh parsley, for garnish.
PREPARATION:
1st Step
Over medium heat, warm a drizzle of oil in a large saucepan. Add the chopped carrots, celery, and onion. They should be sautéed until they begin to mellow and become aromatic.
2nd Step
Stir in the diced cabbage and minced garlic. Cook the cabbage for a few minutes until it begins to wilt.
3rd Step
