– 8 flour tortillas.
– 2 Cups.Of enchilada sauce (store-bought or homemade).
– 1 Cup.Of shredded cheese for topping.
– Chopped fresh cilantro.
– Sliced green onions.
– Sour cream
PREPARATION:
1st Step
Combine the chicken, cream cheese, cheese, onion, bell pepper, garlic, cumin, chili powder, salt, and pepper in a large mixing bowl. Blend together until smooth and creamy.
2nd Step
Prepare a 350F (175C) oven. To make the flour tortillas more malleable, warm them for a few seconds in the microwave or on a dry pan.
3rd Step
Spread a heaping tablespoon of the filling mixture down the middle of each tortilla. After filling the tortilla, roll it up firmly and lay it in the baking dish with the seam side down.
4th Step
Toss the rolled tortillas in the enchilada sauce and coat them well. Put aside some of the sauce for a garnish.
