– 1/4 Cup.Of olive oil.
– 1/4 Cup.Of pineapple juice.
– 3 Tbsp.Of soy sauce.
– 2 Tbsp.Of honey.
– 2 cloves garlic, minced.
– 1 Tsp.Of grated ginger.
– 1 Tbsp.Of lime juice.
– 1/2 Tsp.Of black pepper.
– Salt to taste
PREPARATION:
1. In a medium bowl, add the marinade ingredients and whisk to incorporate. For subsequent basting of the kebabs, save aside a tiny amount of the marinade.
2. Stir the marinade thoroughly before adding the bite-sized chicken pieces. To enable the flavors to mingle, marinate the chicken in the bowl for at least 30 minutes (or preferably, up to 4 hours) in the refrigerator.
3. If using the oven broiler, preheat the oven to 400°F (200°C) or your grill to medium-high heat.
4. To create a kebab with a visually pleasing appearance, thread the marinated chicken, bacon pieces, pineapple chunks, bell peppers, and red onion alternately onto the skewers.
