INSTRUCTIONS:
1st Step
Turn the oven temperature up to 400 degrees Fahrenheit (200 degrees Celsius). For easier cleanup, use parchment paper or lightly butter a large baking sheet or roasting pan.
2nd Step
Wash the baby potatoes well and then cut them in half or quarters, based on their size. It’s best if the pieces are all around the same size so that they cook at the same rate.
3rd Step
Mix the cut potatoes, sliced onion, minced garlic, thyme, rosemary, paprika, garlic powder, onion powder, olive oil, salt, and pepper in a large mixing basin until everything is well distributed. Toss the potatoes and onions with the oil and spices until they are well covered.
4th Step
Place a single layer of the seasoned potatoes and onions on the baking sheet or roasting pan. This will ensure that they brown evenly and thoroughly throughout cooking. Arrange the potatoes and onions on a baking sheet and nestle the smoked sausage slices in between them.
5th Step
For about 25 to 30 minutes, in a preheated oven, roast the sausage and potatoes until the potatoes are soft and gently browned and the sausage is cooked through and slightly caramelized.
6th Step
If you want evenly roasted sausage and potatoes, remove the baking sheet from the oven around halfway through cooking and give the ingredients a slight toss.
