INSTRUCTIONS:
  1. Prepare your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon. Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
  2. Roast the spaghetti squash in the preheated oven for 40-50 minutes, or until the flesh is tender and can be easily pierced with a fork. Remove from the oven and let cool slightly.
  3. Once the spaghetti squash has cooled, use a fork to scrape the flesh into a large mixing bowl. Discard the skins.
  4. Add the crumbled bacon, grated Parmesan cheese, all-purpose flour, beaten eggs, chopped fresh parsley, garlic powder, salt, and pepper to the bowl with the spaghetti squash. Mix well until all ingredients are evenly combined.
  5. Heat a thin layer of olive oil in a large skillet over medium heat.
  6. Scoop about 1/4 cup of the spaghetti squash mixture and form it into a patty with your hands. Place the patty in the hot skillet and gently flatten it with a spatula.
  7. Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  8. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
  9. Repeat the process with the remaining spaghetti squash mixture, adding more olive oil to the skillet as needed.
  10. Serve the Bacon Spaghetti Squash Fritters hot, garnished with additional Parmesan cheese and fresh parsley if desired.
